2 lemons, cut into thin slices
1 salmon fillet
1 salt
1 Freshly ground black pepper
6 tbsp. melted butter
2 tbsp honey
3 minced garlic cloves
1 cup chopped thyme leaves
2 tbsp. dried oregano
1 Fresh chopped parsley to decorate

Tin Foil Salmon and Asparagus Directions

  1. Preheat oven 350 degrees or Campfire or grill over medium coals
  2. Line a baking tray covered with aluminum foil and spray with cooking spray.
  3. In center of foil, put the lemon slices in an even layer.
  4. Season both sides of the salmon with salt and pepper and place over the lemon wedges.
  5. In a bowl, whisk butter, honey, garlic, and oregano/thyme. Pour over the salmon, then wrap the foil around the salmon. 
  6. Bake until salmon is cooked through, about 25 minutes. - Turn the foil pack over and roast for 2 minutes or until the butter mixture has set.
  7. Garnish with parsley before serving.
  8. Enjoy!
