3 cup quick-cooking oats
1/2 cup flax seeds
3 cup white whole-wheat flour, spooned and leveled
2 cup buckwheat flour, spooned and leveled
2 cup all-purpose flour, spooned and leveled
1/4 cup sugar
1/4 cup baking powder

Make-Ahead Whole-Grain Pancake Mix Directions

  1. Pulse oats and flax in a food processor until finely chopped, 10 to 15 times. Stir together oat mixture, flours, sugar, baking powder, salt, and baking soda in a bowl.
  2. Store in an airtight container in refrigerator or freezer, up to 2 months.
